White Bean Dip and App





460 grams (380gx 2 boxes) large white beans (or if just making dip, can use small white beans too)
1/4 cup olive oil
1/2 teaspoon fresh or dried rosemary
1/2 teaspoon thyme
1/2 teaspoon salt, preferably Maldon
1/4 teaspoon of freshly ground pepper
Juice from 1/2 lemon
Zest from 1/2 lemon
4 cloves garlic sliced thin

Drain and rinse beans.
In a small saucepan gently warm oil, garlic, and herbs until fragrant and garlic just starts to sizzle, about 5-10 minutes. Add salt, zest, and lemon juice and remove from heat and add beans, stirring gently to blend.

For appetizer:
You can either serve immediately in a shallow bowl with toothpicks or let marinate in fridge for several hours or a day or two to improve flavor.

For dip:
Mash with fork or in food processor, adding a drizzle of water or olive oil to thin. Add salt and pepper to taste. Serve with freshly cut crudités (I.e. raw veggies)
